One technique for sweetening your drinks is to use simple syrup, but why use a plain simple syrup when you can add natural flavors? Today I'm going to show you how to easily make an infused simple syrup with a floral aroma and flavor.
Lavender infused simple syrup
Simple syrup has a lot of applications, from sweetening coffee and tea to making refreshing summer drinks and even soaking cakes to make them moist. This lavender flavored simple syrup is made with dried lavenders and is ready in no time. You can make a batch of this syrup, keep it in the fridge and use as you please. Keep reading to learn how to make this recipe at home.
Can you cook with any kind of lavender?
You need to make sure the lavender you’re using is edible and for culinary uses because some lavenders could have pesticides, meaning they're not safe to eat. Ask your local spice shop or vendor at the farmers market if the lavender you’re purchasing is for culinary use. If buying online, make sure it’s labeled “culinary lavender”, “safe to eat” or “culinary grade.”
How to make the syrup
- First, place all the ingredients in a sauce pan and place over medium heat.
- Bring to simmer and cook until the sugar is dissolved and the syrup thickens a bit.
- Turn the heat off and let the syrup cool for about one hour.
- Pour the syrup through a mesh strainer and discard the lavender buds.
- Lastly, let the syrup cool at room temperature and use it in your favorite recipe.
How can I use this syrup?
There are many ways to use this sweetener, the simplest being to simply add it to some sparkling water for a quick drink. You can add it to your tea and coffee for a flavor kick or make different refreshers and coolers for summer (recipes coming soon!). Whatever you choose, lavender gives a nice floral flavor to your drinks.
Storing tips
This syrup will keep without crystallization for a long time. All you need to do is to transfer the syrup to a clean jar and refrigerate. You can keep it in the fridge for up to 2 months.

Lavender Simple Syrup Recipe
Ingredients
- 1 cup granulated sugar
- 1 cup water
- 2 tablespoon dried lavender buds see notes
Instructions
- Place the water, sugar and lavender buds in a sauce pan.
- Bring to a low simmer and cook until sugar is dissolved and the syrup is thickening. About 15 to 20 minutes.
- Turn the heat off and let the lavender steep for one hour in the syrup.
- Pour the syrup through a mesh strainer and discard the lavender buds.
Notes
- Make sure the lavender you're using is edible and labeled "culinary lavender" or "safe to eat".
- Store lavender simple syrup in a clean glass jar and refrigerate for up to 2 months.
